Winter White Turkey Chili

Winter is here which means comfort food! Fortunately, there are some healthy options out there that pack the cozy but are not a complete doozy to your health. One of our favorites to savor in the colder months ahead is turkey chili (Winter White Chili). Not only is it flavorful and filling, but you will not feel guilty going back for seconds. It also makes a great lunch to pack from home the next day. Enjoy!
WINTER WHITE CHILI
Ingredients:
1 lbs. lean ground turkey or cubed turkey
2 tsp. olive oil
1 medium onion, diced
1 tsp. ground cumin
1 tsp. chili powder
½ tsp. white pepper
14 oz. can of corn, drained
4 oz. can of green chilies, diced
2 16 oz. cans of white beans, drained
1 cup Monterey Jack cheese, optional

Instructions:
In a large saucepan, brown turkey in oil with onion, cumin, chili powder, and white pepper. Stir in corn, chicken broth, and green chilies. Bring to a boil; cover and simmer for 15-20 minutes until heated and flavors are blended. Add beans and simmer until heated through. Top with Monterey Jack cheese if desired.
